Fruity Pizza Bites

A summery, sweet, high-protein snack.

We’re in the best season for an abundance of perfectly ripe produce! For your next get-together, ditch the packaged party snacks or sugary desserts for this naturally sweet treat. These little bites are easy to make, but don’t feel like you have to use the ingredients we suggest. You can try your favorite fruits from your local farmers’ market as well.

Fruity Pizza Bites
Makes 10 mini rectangles
Serves 2

1/2 piece lavash or any light flatbread
1 nectarine
1 kiwi
1 sprig fresh tarragon (if desired)
¼ cup part-skim ricotta, chilled
¼ mango
1 heaping tablespoon non-fat plain Greek yogurt, chilled
1 lemon wedge, optional
Cooking spray


  1. Preheat oven to 425°F (toaster oven or conventional). Cut the flatbread into 10 rectangular pieces.
  2. Place the flatbread on a lightly greased baking sheet and heat for 3 minutes, or until lightly browned. Set aside to cool.
  3. Dice the kiwi, nectarine, and mango. Roughly chop the tarragon if you want to spice things up.
  4. In a small bowl, combine the chilled ricotta and Greek yogurt until mixed.
  5. Top each flatbread with a small spoonful of the ricotta-yogurt mixture, then any choice of fruit, then tarragon if using. Serve with squeezed lemon, if desired.

Handy Hint: No need to stick to the suggested toppings. Feeling tropical? Try pineapple, shredded coconut, and papaya. Chocolate, please? Go for cacao nips, fresh chopped mint, and banana.
