Lemony White Bean Dip

Inspired by the breezy Mediterranean, this dip is a cool fix for between-meal or on-the-go hunger. It’s packed with wholesome goodies like protein, fiber, and omega-3 fats, and comes with a zesty flavor that won’t bore your taste buds. Enjoy it with sliced fresh carrots or celery for a satisfying crunch—and to deliciously add more veggies to your day!

Lemony White Bean Dip
Serves 4

1 can cannellini beans, rinsed
2 Tbsp finely chopped sun-dried tomatoes (in oil)
1 clove garlic, minced
2 Tbsp + 1 tsp extra virgin olive oil
1/2 juice of a lemon
2 Tbsp chopped fresh parsley
Coarse salt and cracked pepper to taste
Carrot sticks, celery, or other veggies

1. Combine beans, sun-dried tomatoes, garlic, oil, and lemon juice in a food processor until smooth, about 1 minute. Stir in parsley, salt, and pepper, and blend for 1 minute longer.

2. Serve in a medium bowl with carrots, celery, or other veggies for dipping.
