Apple Blackberry Oat Muffins

An anytime treat bursting with autumn flavors.


Ingredients

  • 1 cup white whole wheat flour (or all-purpose flour)
  • 1 cup rolled oats
  • 1 1/2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/4 teaspoon salt
  • 1 apple, diced
  • 1/2 cup blackberries
  • 3/4 cup packed brown sugar
  • 4 tablespoons olive oil
  • 2 eggs, beaten
  • 1 teaspoon vanilla
  • 1 cup unsweetened almond milk

Directions

Step 1

Preheat oven to 350°F. Add liners to muffin tray or spray lightly with oil.

Step 2

Mix first five dry ingredients. Fold in diced apples and blackberries.

Step 3

In a separate bowl, mix sugar, olive oil, egg, vanilla, and almond milk.

Step 4

Combine wet and dry ingredients until just blended (don’t over-mix!).

Step 5

Fill each muffin tin with batter. Bake for 15-20 minutes.

Step 6

For optional Cinnamon-Yogurt Glaze: Mix 1/4 cup brown sugar, 1/4 cup non-fat Greek yogurt, and 1/2 teaspoon cinnamon. Heat for 10 seconds and drizzle over muffins.

Step 7

Handy Hint: It’s grill time! Cut muffins in half and heat for 1-2 minutes on a lightly greased grill pan for a sweet surprise.
