Breakfast BLT with Grilled Tomatoes
Start your day with a square meal.
- 2 plum tomatoes, sliced thickly
- 1 teaspoon olive oil
- 1 or 1/8 cup egg white
- 4” whole grain baguette
- 2 tablespoons avocado
- 1/4 cup any greens (we used watercress)
- 2 slices turkey bacon, cooked
Preheat grill pan or grill. Brush tomato slices with oil and season with salt and pepper. Grill for 2-4 minutes or until slightly caramelized. Set aside.
Heat a pan on medium and spray with olive oil. Add egg white and allow to set for 30 seconds. Flip over and scramble the egg whites with a spatula. Set aside.
To assemble: Toast bread, if desired. Spread avocado onto baguette with a butter knife. Add tomatoes, eggs, greens, and turkey bacon, and serve.
Handy Hint: Replace mayo with creamy avocado for a healthier spread.
