Satisfy your potato craving with a healthier alternative.
- 2 cups curly kale
- 2 tsp olive oil
- A sprinkle of kosher salt
Preheat oven to 375°F. Use a knife to cut the ribs away from the leaves of the kale. Cut the leaves into 1.5" pieces.
Place on one to two baking sheets. Drizzle with olive oil, sprinkle with salt, and use your hands to toss to coat evenly.
Bake until crisp, but not burnt, about 10 to 15 minutes.
