Zucchini, Parmesan, and Mache Salad
A basic salad that contains essential vitamins and nutrients.
- 2 medium zucchini, thinly sliced
- 1/4 cup shaved Parmigiano-Reggiano cheese
- 2 tablespoons olive oil
- 1/2 teaspoon grated fresh lemon rind
- 1 tablespoon fresh lemon juice (about 1 small lemon)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 (3 1/2-ounce) container mâche
Combine first 7 ingredients in a large bowl, and toss. Let stand at room temperature 15 minutes.
Add mâche, and toss well to coat. Serve immediately.
